I like my beef a little on the rare side, but my fish needs to be cooked all the way through! That should make some interesting sushi.

Freshly caught and cleaned, rigor mortis has not set.

Rigor mortis (Latin: rigor "stiffness", mortis "of death") is one of the recognizable signs of death, caused by chemical changes in the muscles after death, causing the limbs of the corpse to stiffen after death.

There are a number of styles of sashimi that are served while still moving. That's how you know your dinner is fresh - it is trying to escape.

Fish have a more "distributed" central nervous system than mammals; part of their "startle" reflex is to flex (like the fish in the video does) when firmly grabbed. The head is not required for this reflex to occur.

Perfect example why I don't eat raw meat of any kind. Sushi, etc. Nope. If its not cooked and dead, neither are the possible parasites it could be harboring.
